1 medium Hokkaido
2-3 sweet potatoes
6 Jerusalem artichoke
Cut vegetables into bite-sized pieces (the softer the vegetables, the larger the pieces so they don't get mushy)
Mix the vegetables with salt, herbs, olive oil and pumpkin seeds, place on a baking sheet, bake in the oven at 180°C for 30-40 minutes and enjoy.
Tip: any vegetable is suitable, use herbs as you like. Possibly crumble feta cheese over the vegetable before baking - also very tasty.
