Meatballs and green salad with Hamlitsch pumpkin seeds and pumpkin seed flour

4 servings / working time approx. 30 min.

150g cauliflower
1 onion
1 clove of garlic
500g ground beef
2 eggs
50g low-fat curd
40g grated cheese
salt, pepper, herbs
about 100g Hamlitsch pumpkin seed flour
2 tbsp olive oil
3 tbsp Hamlitsch pumpkin seeds

For the dressing:
approx. 6 tbsp Hamlitsch Styrian Pumpkin seed oil PGI
approx. 6 tblsp Hamlitsch apple cider vinegar
salt, pepper

Finely chop cauliflower, garlic, onion in a kitchen machine. Mix all ingredients together and knead well. Form the meatballs from the mixture and turn them into pumpkin seed flour. Heat the olive oil in a pan and fry the meatballs brown on both sides.
Marinate the green salad with Hamlitsch seed oil, apple cider vinegar, salt and pepper and garnish with Hamlitsch pumpkin seeds.
