Leaf salad with chanterelles & Styrian pumpkin seed oil PGI

2 servings / working time approx. 15 minutes

1/2 lettuce
100g cocktail tomatoes
2 tbsp bacon diced
1-2 handfuls of chanterelles
1/2 yellow pepper
1/4 zucchini
2 tbsp pumpkin seeds

50ml Styrian pumpkin seed oil PGI
30ml naturally cloudy apple cider vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon salt, a little pepper

- Wash and cut the main salad
- Quarter the cherry tomatoes
- Roast the pumpkin seeds in a pan without oil and set aside
- Fry the bacon and then add the chanterelles and fry until the liquid has evaporated, put aside
- Cut the paprika and zucchini into strips and sauté briefly in the same pan until firm to the bite
- Arrange the salad on a plate and spread the vegetables over it
- Mix the dressing well and drizzle over the salad
- Garnish with bacon and chanterelles, 2 tablespoons of pumpkin seeds and parsley
