Pumpkin Seed Brittle

2 baking trays / time: approx. 50 mins

100g butter
125ml single cream
30g honey
130g sugar
1 pinch of salt
150g flaked almonds
180g pumpkin seeds
60g sesame seeds.

Put all the liquid ingredients with the sugar and salt in a pan and simmer for 5 minutes. Stir in the dry ingredients, then spread the mass thinly over two normal-large baking trays. Bake in preheated oven at 180 degrees for 12-15 minutes until golden brown. Not too dark, otherwise they will be too bitter. Not too light as they will be tacky. Cut in small squares after cooling.
